What could I use to make homemade mac and cheese taste sharper?

I already use extra sharp cheddar, but it is normally just the store brand. My family does not like onions in mac and cheese. I have tried adding hot pepper sauce, dry mustard, salt, black pepper and parmesan cheese, but nothing is really giving it that sharp, savory flavor I'm looking for, any ideas?
